Nutrition Expert Shares Underrated Clean Eating Options
Clinical Professor and Chair for the Department of Interdisciplinary Health Sciences Mindy Haar, Ph.D., RDN, has been quoted in a TIME article about health foods that are often overlooked. Among other clean eating options like prunes, watercress, and hemp hearts, Haar recommends clementines and freekeh for a nutritious, varied diet.
While “clementines are wonderful sources of vitamin C,” she highlights freekeh for its protein, fiber, potassium, and folate levels, and suggests it as a rice or barley substitute. “The seeds are a bit tender and the kernels are roasted, so it has a smoky, nutty flavor,” she says.
