Eating to Lower Cholesterol
Clinical Professor and Chair for the Department of Interdisciplinary Health Sciences Mindy Haar, Ph.D., is featured in a Verywell Health article noting which foods are effective at lowering cholesterol levels. Foods rich in soluble fiber, like legumes, fruits, and vegetables, are key.
Haar explains that as gut bacteria ferments soluble fibers from legumes, like chickpeas and black beans, into short-chain fatty acids, the compounds created may help slow cholesterol production. She also notes how apples and citrus fruits are good sources of pectin, a type of soluble fiber that helps the body rid itself of cholesterol through digestion.
