Canned Veggies are Healthy, Too

Health, Clinical Professor and Chair for the Department of Interdisciplinary Health Sciences Mindy Haar, Ph.D., comments on the benefits of eating canned vegetables. While many shoppers skip canned veggies over concerns about the canning process, Haar reminds consumers that not all nutrients are lost: “Vitamins, minerals, and other phytonutrients are affected differently by heat [during canning],” she says. Additionally, studies find that those who frequently consume canned foods have higher nutrient intakes and healthier eating habits.
“While fresh and frozen are usually more nutrient-dense than canned, canned vegetables still provide nutrients and fiber,” Haar reminds consumers.
