Liz is committed to a healthy lifestyle in various aspects. She goes to the gym every morning where she takes a spin class and swims laps in the pool. She starts her day with a big bowl of heart-healthy oatmeal. At lunchtime, she eats very healthy by incorporating lots of fresh fruit , vegetables and lean meats into her diet. We eat lunch together everyday, and she rarely orders out. She brings a healthful, home cooked meal each day.
I always ask her how she wakes up at 5am to get to the gym. She tells me "its easy when its a priority".
On the weekends, she goes to her vacation house upstate where she rides her quad and gardens. The peacefulness of the 'country' is a welcome stress relief of the hustle and bustle on NY life.
She also volunteers for her church, offered to be a team leader for NYCOM graduation and is generally the department 'mom' to us at NYCOM's Academic Technology Department. To boot, she is also an expert in her field, assisting faculty and staff with software based issues ranging from training to databases to spreadsheets to imaging.
Elizabeth is an beautiful, vibrant, intelligent, woman,...whom I actually had to ask her age because I never thought she could be 65!
