Chef Daniel Boulud Judges NYIT Cast Iron Chef

Take some friendly competition among neighboring police forces, add a world-renowned celebrity chef, set them onstage at the historic NYIT de Seversky Mansion on Long Island’s Gold Coast, and what do you get? NYIT’s Cast Iron Chef Competition—pitting teams from the Old Brookville and Old Westbury police departments and NYIT against each other in a fast-paced cooking competition with guest judge Daniel Boulud. Tom Schaudel, popular chef and Long Island restaurateur, kept the competition moving with lively commentary enjoyed by nearly 200 attendees braving a stormy April 30 evening.
Two students from NYIT’s hospitality management program, Ryan Malone and Oksana Melnyk, joined Boulud at the judge’s table. The trio tasted an appetizer and main dish entrée from each team based on a basket of mystery ingredients provided just seconds before their 30-minute preparation period for each course. Each team was judged on teamwork, cleanliness, presentation, and taste. Leading into the competition, Boulud prepped the teams: “I’m looking for a little bit of a story behind your dish,” he said, also stressing that pacing would key to the challenge.
NYIT-Old Westbury, known as one of the safest campuses in the United States, hosted the event in appreciation of the police departments in Old Westbury and Old Brookville, as the campus is located in both villages and served by both departments. “We are so grateful to the dedicated service of our local police forces, and we were happy to have them here this year as part of our Cast Iron Chef Competition,” said Robert Rizzuto, Director of Dining Services.
While guests enjoyed selections from NYIT de Seversky Mansion’s delicious French-themed appetizer menu,” the competition heated up with the preparation of a number of delicious dishes, some delightful story-telling, and Schaudel’s playful play-by-play. In the end, the Old Brookville Police Department reigned victorious, with a score of 269 out of a possible 300 points, with Old Westbury in second place with a score of 261 and NYIT in third with 246. The winning appetizer included pan seared scallops and the entrée was a pan fried breast of duck served with fingerling potatoes.
Richard Smith, Chief of Police in Old Brookville, summed it up this way: “Today’s affair was an outstanding morale booster for our department and not only provided our personnel with the opportunity to be recognized for the exceptional police work that they do, but also uncovered some extraordinary culinary skills that I had been previously unaware of.”
“A good time was had by all,” said Dan Duggan, Chief of Police in Old Westbury. “The members of the Old Westbury Police are looking forward to next year’s competition.”
